WebI rewatched Babish's video for any clues and have some questions. First I used around 2 Kg of bones and 3-4 liters of water to fully cover them and now have around 4 liters of broth. Can I boil it down in the hope it is just too much water to gel right now? With that in mind my second question: Babish never used a lid in the video. Is that correct?
